Dear Goji Lover,
In the next couple of minutes, you're either going to love me or hate me.
I've been watching in amazement as a subtle but very damaging LIE has continued to rob people of their hard earned money.
This has been going on for years and starting right now, I'm going to stop this charade!
In a few easy steps, I'm going to show you how Goji Juice CANNOT possibly have any of the highly valued active ingredients called Goji Polysaccharides (sometimes referred to as "master molecules") in it.
But first, I'd like to remind you why Goji is SO highly nutritious and healthful. It's because it contains 4 unusual Polysaccharides. These Polysaccharides consist of very large molecules that are part sugar and part protein. I'll summarize why Goji Polysaccharides are so important for your health a little further down.
Onwards. Let's get started with the first reality check:
Try This #1...
Try this experiment: Take any fresh fruit or vegetable, run it through a juicer or blender and let it sit out at room temperature. How long does it take to go bad? A few days at most?
Now take some sun dried Goji Berries (like those that I've been providing to Goji lovers all over the country for the last few years) and put a thin layer in a small dish. Then add just enough water to nearly cover them. How long does it take for them to grow mold or get frothy with fermentation? A few days at most?
Conclusion: All fresh fruits and vegetables, including Goji Berries, have trace amounts of bacteria and mold on their skins. This causes them to spoil in just a few days.
Here's a fact: Any commercial fruit or vegetable juice must (by law) be heated to a high enough temperature to KILL bad bacteria and mold, which causes spoiling.
Sorry, the law does not make an exception for Goji Juice.
(Let me clarify: A commercial fruit or vegetable juice is one you buy instead of making it yourself.)
Maybe you're saying, "But what about pasteurization and the Aseptic Process?"
OK. Let me tell you about Aseptic Process. For starters, it takes place in an extremely clean facility. Aseptic means the opposite of "a poisoned condition due to the spread of bacteria." In short, it means the absence of all bacteria.
In all fairness, ALL juices and foods must be processed in Health Department certified facilities that are super clean, even if the facility doesn't use the Aseptic Process.
No matter how clean bottling facilities are, all juices are naturally full of mold and bacteria from the fruit they're made from. (See the reality check above.) It doesn't matter how sparkling clean the facility is.
What's a bottling facility to do?
The only option, as mentioned above, is to heat the juice to a high enough temperature to KILL the bad bacteria and mold. Simple enough.
In the Aseptic process, one of the KEY steps in the process is to ALWAYS flash heat sterilize the juice.
No Exceptions
What is flash heat sterilizing?
It's a different process than pasteurization and uses much higher temperatures for a much shorter period of time. By the way, pasteurization heats juice to 180 degrees F and lets it cool slowly.) In flash sterilization, juice is heated to between 260 and 286 degrees F and then cooled and bottled in a few seconds.
Wow! At those temperatures, it's EASY to see why flash heat sterilizing kills all bacteria, pathogens and live enzymes in the Goji juice. After all, that's what the Aseptic process is DESIGNED to do.
Let me emphasize this point: No living organisms, good or bad, survive flash heat sterilization.
This way, the sterilized juice can sit for months and months in warehouse boxes and on your pantry shelf.
This means commercial Goji juice is NOT raw! Never was, never will be.
But many Goji Juice distributors lead you to believe their Goji Juice is absolutely RAW!
"Poppycock!" I say.
Sure flash heat sterilizing is only for a few seconds. But it's higher than boiling. (Boiling happens at 212 degrees Fahrenheit.) Aseptic flash heating is 260-286 degrees Fahrenheit!
Let's see what can happen in a few seconds:
Try This #2...
Try this experiment:
Take out your favorite frying pan. Put it on the stove over medium heat until any water drops you sprinkle into it quickly boil away.
Next, take an egg out of the refrigerator.
Remember, egg whites are made of protein (just like Goji polysaccharides.) Crack the egg open and plop it
into the hot frying pan. How long does it take for the clear outer part of
the egg to go from clear to white?
If you watch carefully, you'll notice that this happens almost as quickly as the egg touches the hot surface of the pan. It takes a few seconds.
Conclusion: Heat destroys protein molecules almost instantly. No exceptions.
Why am I telling you this? A Goji Polysaccharide consists of a very large molecule which is a mixture of sugar and protein. These molecules are EXTREMELY easily destroyed by heat. (Don't get me started with what other nutrients are destroyed when juice is heat sterilized.)
Here is my key don't-miss-it point: When you heat Goji Juice, which you need to do to kill the bacteria and mold that cause it to spoil, you always destroy ALL the Goji Polysaccharides. No exceptions.
A Deadly Experiment
As an aside - anyone remember the E. Coli tainted juices that Odwalla had to recall in November 1996 because the apple juice in them had not been pasteurized?
That was the last time a juice manufacturer tried to include raw juice in a commercial product. Odwalla got off cheap - the settlements to the families that got sick were only about $15 million. It also had to pay a $1.5 million dollar criminal fine to the FDA. Keep in mind that Odwalla's juices were refrigerated, but it still turned into an expensive disaster for the company.
After seeing the results of Odwalla's experiment with un-heat-treated juice, do you think any company would dare risk deaths and huge fines by selling raw juice?
And don't forget: You MUST heat the juice in order to give it a shelf life of more than a few days. All juices, and I do mean ALL juices, are treated with enough heat to kill bacteria and mold.
In the case of Goji Juice, this also ALWAYS destroys the Goji Polysaccharides. You see, they are much more sensitive to heat than the bacteria and mold which you also kill.

It's true that Goji Polysaccharides are great for feeling younger, boosting the immune system and even losing weight.
